Decorating PEEPS!

It’s the day after the pageant and half of the house is down with the stomach flu. I am even starting to feel it. But I wanted to decorate some PEEPS today! I thought it would be really fun for the kids to decorate them and hand them out to their friends on Monday. I love Easter because of what the day TRULY MEANS and the pastels!!!!

All you need is some melting chocolate, Peeps, and sprinkles. You melt the chocolate in coffee cups and dip the peeps in them. Set the dipped peeps on wax paper and put your sprinkles on them. Then just let them harden. Everything was purchased at Walmart.

Kids Make Their Own Pizza Plus Recipe!

What kid doesn’t like pizza? And what is better than making your own?! 

Those 2 questions are pretty obvious in our home. We tried using buscuit dough in the past but I found it messier and more difficult than using regular pizza dough. With my normal pizza dough recipe I have to take extra time to let the dough rise. My biggest annoyance with homemade breads is rise time. This pizza dough recipe is G-R-E-A-T because you don’t have to let it rise! It was also very forgiving when the kids were playing with it and rolling it out. The biscuit dough we used to use was always so sticky and tough to work with. 

No Rise Pizza Dough Recipe

1 Packet of Yeast or 1 TBSP
1 Cup of Warm Water To Activate The Yeast
1 tsp Salt
1 tsp Sugar
2 TBSP Olive Oil
2 1/2 – 3 Cups Of Flour
OPTIONAL – Kids tend to like the plain version!
2 Minced Garlic Cloves
1 tsp Dried Basil
1 tsp Dried Oregano 

Mix Sugar, Water and Yeast in a bowl and let sit for 5 minutes to activate the yeast. Add salt, oil, and flour (and optional seasoning), mix it well. Knead dough on a floured surface by hand for 3 minutes OR use a mixer and dough hook for 2 minutes. Let the dough rest for 10 minutes. Roll out on a floured surface and put your toppings on it. Cook at 425 degrees for 15 minutes. 

For the kids I only make 1 pizza crust. I divide it into 3 balls and let them roll their own dough. TIP— I use a fondant rolling pin for everything. You can find them at Wal-Mart or Target for around $20.

Superbowl Sunday 2014

Well the ONLY good part about the superbowl this year would be all the food! The Broncos were being dominated by the Seahawks the ENTIRE game. It was painful to watch. By the end of it we were all in the kitchen eating our sorrows away. Tom was working the whole weekend so I was scrambling to clean and cook for everyone. I made pulled pork, sugar cookies, cupcakes, pico de gullo, guacamole, devilled eggs, egg salad, strawberry shortcake, and banana pudding. I need to post recipes because everything turned out great! We have lots of leftovers which is always nice. I probably won’t have to cook for another week because of all the things we have in the freezer. Even though our team lost I’m a little glad that the Seahawks won their first Superbowl ever! The Broncos can try again next year hopefully. They are just so inconsistent and they need to work on that.

Blueberry Cheesecake Recipe

 

 

You’ll Need:

Honey Maid Graham Cracker Crumbs
Cupcake liners
Chopped Pecans
Butter
Cream Cheese 8 oz.
14 oz can Sweetened Condensed Milk
1 Can Blueberry Pie Filling|
Frozen Whipped Topping
Cupcake pans

To Make The Graham Cracker Crust:

Mix 1 1/2 cup Graham Cracker Crumbs, 4 TBSP melted butter, 1/2 – 3/4 cup chopped pecans (depending on how many you like in there). Take spoon and smash the crust mixture in the bottom of your cupcake liners. If your mixture is too dry you can add more melted butter to it.

To Make Filling:

Mix 8 oz packet of cream cheese and 14 oz can sweetened condensed milk. Once they are blended together add half the can of blueberry pie filling. Fold in 1 cup of frozen whipped topping.

Spoon the filling into the cupcake pans and cover with foil. Freeze for 3 hours before serving. I like to take them out of the freezer 10 minutes before serving so they are soft.
